Puerto Rico is an island nation that is officially a territory of the United States. Puerto Rican cuisine has evolved from several strong influences, including those of the original peoples, such as the Tainos, and the Spanish conquerors that drove most of the natives out and enslaved the remaining. African and Caribbean influence is also reflected in the cuisine of the island, which has also been shaped significantly by its climate and geology.

Cocina criolla, one of the main cuisine styles particular to the island has deep roots, extending far back to the native Tainos and Arawaks. Their culinary traditions were based tropical fruits, native vegetables, seafood, and corn. With the Spanish came a host of other ingredients that expanded the criolla style. These included olive oil, rice, wheat and meats, such as pork and beef. As enslaved African peoples were imported for work on the sugar cane plantations, their culinary traditions took root as well, and their contributions, which included taro and okra, became assimilated into the whole of criolla cuisine.

Many of the islands main dishes are seasoned with adobo and sofrito, spice mixtures that impart those flavors that the island is so well known for. Adobo, which can vary from cook to cook, or if bought prepared, from manufacturer to manufacturer, generally consists of black peppercorns, oregano, salt, garlic, olive oil, and lime juice. When bought prepared in powdered form, most include salt, powdered garlic, citric acid, pepper, oregano, turmeric and MSG, which is a good reason to spend a little time making your own if experimenting with Puerto Rican cuisine at home. While generally used for seasoning meats, it is considered to be a sort of all-purpose seasoning mixture.

Sofrito is made from onions, garlic, cilantro, peppers, and often includes achiote, which is from the seeds of the annatoo plant, and helps to produce a bright yellow color in the finished product. This, too, is used in a variety of dishes, ranging from meat dishes to soups to standard forms of beans and rice.

One pot dishes, or stews, are common to Puerto Rican cuisine. These are often made of meats, and flavored with a variety of spices and ingredients in addition to adobo and sofrito. Among these are Spanish olives stuffed with pimiento, sweet chili peppers, capers, potatoes, onions, garlic, fresh cilantro, and occasionally raisins.

Chicken with rice is a dish that has become a Puerto Rican specialty, with many families having their own special style, handed down from generation to generation. Chicken is a main ingredient of many criolla dishes, and these dishes, while careful attention is given to spicing techniques, rarely are they what could be termed hotly spiced.

Naturally, seafood is an important part of the island cuisine. Fried fish is often served with a special sauce made of olives, olive oil, onions, pimientos, capers, tomato sauce, vinegar, garlic and bay leaves. Broiled, steamed or grilled fish is lightly seasoned, if at all, during the cooking process and served with a splash of lime juice with perhaps just a hint of garlic.

Puerto Rican cuisine has many facets, arising from the islands long, complex history. The blend of native culinary traditions with those of the European settlers and the enslaved African populations that they brought with them has resulted in a unique and flavorful cuisine that is beloved by many.

Whoever you work for and on whatever case it is necessary to always remain professional, discrete and honest. Client confidentiality is of the utmost importance and reassuring clients of your discretion and sensitivity to their situation is also imperative to being a good P.I.

What qualifications and training are required to become a Private Investigator?

At present there are no educational standards established by a governing body for this profession but there are several routes you can take to gain training. Many P.I.s are self-employed but there are larger investigation companies that provide employment and may provide training or work shadowing possibilities as well.

There are also no formal qualifications required at present to start up your own business in this profession but a common route to go is from a military, police or a security background. This type of background is not essential but it does have some advantages. If you havent got experience in any of these fields it is still possible to become a private investigator through private training.

It is beneficial to have a good level of general education plus business skills are an advantage if you plan to work on a freelance or self-employed basis. You can also complete a BTEC Level 3 Advanced Diploma in Private Investigation by undertaking a course with the Academy of Professional Investigation (API). If you are self-employed you will have to arrange your own training but most employers will provide on-going training while working.

Regardless of training certain skills are required to become a P.I. and these include observational skills, attention to detail, logic, patience, honesty and perseverance.

Postnatal 'confinement' food Part 2

Everybody will ask you to eat only ' heaty' food and avoid cold or cooling food as your body is cold after childbirth. This applies to the 3 main races in Malaysia but sometimes, what is considered 'heaty' may be 'cooling' for another which increases our dilemma. The best option is to try out the food as far as your culture and religion advices and learn to substitute the ingredients wherever possible to suit your taste. I am afraid that my culinary expertise is limited to Chinese and Western food so I can only talk about this type of food at this moment in time.

Traditional Chinese confinement food consists mainly of old ginger, rice wine, sesame oil, black vinegar, some warming alcohol, lots of meat especially kampong chicken and lean pork, white fish such as white pomfret and some vegetables.

Apparently, you are supposed to eat 30 chickens, 12 bottles of rice wine and 15 kilos of old ginger root during this period. Whether you can achieve this target is up to you but I find that most women nowadays cannot manage it. On average, if you do practice what is recommended, the cost could easily be about RM 1000.00 ++ just for the food only.

Food to avoid during the first week only
Ginger - Delays healing of wounds and increase risk of jaundice in baby. Substitute with peppercorn or garlic.
Fish - Causes foul smelling lochia or discharge.

Alcohols which are recommended for consumption during the confinement month are: Brandy, Yomeishu, rice wine and Guinness Malta because they are yang'. If you are a non-drinker, this sudden consumption may cause alcohol rash, redness in the face and heart palpitations, so do take it easy. Alcohol does go to the baby through breast milk, so if you want a good night's sleep, drink the alcohol after your dinner. The content of alcohol is reduced during cooking therefore you might consider adding it to your food during cooking instead of drinking it neat. Guinness Malta is non alcoholic and has high iron content therefore is suitable if you are anaemic. Pulut rice is rich in iron therefore is used to make rice wine for postnatal nursing mothers. The rice is low in fat and free of cholesterol with high dietary fibre to reduce risk of heart attack and diabetes. It is better known as Shaoxing wine.

Drinks
It is believed that iced or cold drinks may cause severe shock to the system and further weaken the cold' body therefore it is strongly recommended that boiled warm teas are consumed throughout the day as they are supposed to help heat up the womb. For those who do not believe in these teas you may try drinking Chamomile tea which is beneficial for the baby as well, because it helps to reduce wind

Soups
Soup is a nutritious replacement for water. You can use any meat for stock. The meat supplies fat that is essential for extraction of fat soluble nutrients. Drinking soup about 1 hour before breastfeeding may help to increase milk flow. Chinese soups are usually clear and easier to drink compared to creamy western soups and it is less fattening.

Below are some food ingredients that you might want to add to your diet during the postnatal confinement' month.

Boxthorn fruit or Chinese wolfberry is best known to correct poor eyesight and eye strain. Used in conjunction with other herbs it is effective for improving energy and strength

Chinese angelica root or dong kwai is supposed to nourish the female organs, alleviate menstrual pain and prevent haemorrhage.

Chinese yam (wai san) used in conjunction with meat and other herbs aids digestion, regulate sugar level and control inflammation of the uterus. The dried variety must be soaked for at least 15 minutes before use to remove the powder

Solomon's seal (yok chuk) is used to alleviate many ailments especially those affecting the throat and lungs

Sesame oil, besides being rich in Vitamin E, Iron & Calcium, helps heal the womb and rid it of "dirty residual blood".

Chestnuts invigorate vital energy. Resolves fatigue depression and irritability. High in phosphorous, selenium and calcium

Black vinegar is made from glutinous rice and lowers ph of food. It leaches calcium from bones cooked with it, therefore it is used to prepare high calcium food especially for breast feeding mothers and it also relieves a windy abdomen.

Dill has antibacterial and antispasmodic properties. It is a warming herb which aids digestion, gets rid of gas, encourages lactation, freshens the breath and soothes colic. It is the main ingredient in Gripe water.

Almonds and walnuts contain leucine and isoleucine which are amino acids that regulates growth, blood sugar and wound healing.

Malay confinement food is the same as normal but with a lot of jamu which is basically natural herbal remedies used internally and externally for health and beauty. Make sure the products are registered with the Ministry of Health and that they are locally produced

Kani seeds contain antioxidants to promote youthfulness, tighten vaginal muscles, prevents excessive discharge, odour and itchiness. It firms the breasts and promotes healing of the reproductive system after childbirth.

Gallanggal is a member of the ginger family and it functions as an antibiotic. It warms the body, cleanses the blood, improves appetite, reduces wind and energises the muscles.

Pegaga leaves increases energy, helps ease sleeping problems, improves blood circulation.

Turmeric functions as an antibiotic and promotes a healthy circulatory system.

A recent study conducted by the Center for Labor Market Studies at Northeastern University puts the current national dropout rate at 25 to 30 percent. Additionally, it indicated that males have the highest dropout rate of 20 to 30 percent and are most likely at risk of not graduating from high school with a diploma.

It is said that when a student drops out of school, he/she drops into the criminal justice system. In 2002, the U.S. incarcerated its two millionth person. Of those in prison at the time, 82 percent were high school dropouts.

Dropouts cost our economy billions of dollars each year, and not just from the cost of incarceration. They are an undereducated work force that retards our economic and social development. Businesses cannot depend upon a large portion of graduating students to fill much-needed jobs, which translates to lost government tax revenues. State governments lose money through welfare payments, unemployment and crime prevention programs. Governments, from the president to the local level, have discovered that if they do not pay for programs to decrease the dropout rate now, they will pay much more in the future.

According to the study, the dropout rates vary dramatically by location and racial/ethnic background. The state of Arizona was cited in the study as one of the five states with the lowest graduation rate for 18 year olds. Thus, Phoenix Schools, along with the Arizona State Superintendent of Public Instruction, Tom Horne, have made dropout prevention a top priority.

There are three types of dropouts:

Dropouts students who stop coming to school, Drop-In Dropouts students who come to school but do nothing while they are there, and Forced-Out Dropouts students who were counseled out by school counselors and administrators.

Phoenix Schools are addressing all three types of dropouts. Their initiatives are focused on engaging the students, rather than excluding them. They know that programs alone will not change the dropout rate. Only people and relationships can make a difference.

Phoenix schools work with businesses, community organizations and others to identify and develop effective strategies for keeping students in school. They are working to improve student academic success, believing that the high school renewal initiatives are directly linked to a decreased dropout rate. Phoenix schools are focusing on fixing the system, not the student.

He bills his new book, "Jamies Kitchen," as a "cooking course for everyone." Armed with this cookbook, fresh ingredients and a good set of kitchen tools, there is no technique a new cook cant master.

Jamie Oliver offers the following tips for one of his favorite and most healthy cooking techniques, sauting, or what he calls "pan-frying:"

1. Get Yourself a Pan and Make It Hot

"The single biggest mistake that new cooks make is cooking in a cold pan," Oliver explains. "You must heat the pan before you start cooking. If you start to cook before the pan is hot enough, the food steams instead of caramelizing and frying. You want the heat of the pan to sear in the juices, making the food taste better."

2. Size Matters

"When it comes to frying pans, size matters! If your pan is too small, the ingredients will crowd each other, and theyll end up steaming instead of sauting. But if the pans too big, all those great pan juices will end up evaporating too fast and you may burn what youre cooking," Oliver points out. "So be sure to use the right size pan for the amount of ingredients you have. Also, look for some key features in the pan such as a good heavy bottom that distributes the heat evenly, shallow with rounded sides to make food easy to toss, and an easy-to-hold handle -- long enough to be comfortable to grasp, not slippery, and cool to the touch even when the pan is hot."

3. Want Less Fat? Use Nonstick Pans

"Using nonstick pans lets you use less oil or butter, which means healthy cooking. To get great flavor, what you really need is a good sear. And a good sear doesnt necessarily require lots of fat in the pan," notes Oliver. "When you do this properly, not only do you end up with glorious, flavorful food, but you also seal the juices and the nutrients right in with the flavor and youre cooking healthy food as well."

Oliver has just worked with T-FAL to design his own line of stainless steel cookware, the Jamie Oliver Professional Series. The cookware comes with either pure stainless or nonstick coated saut pans."My wife loves my new T-FAL stainless steel nonstick pans because theyre easy to clean and the cool little red Thermo-Spot lets her know when its ready to go. Her cooking has already improved," he says.

4. Your Mum was Right! The Gears the Thing

"You dont have to go crazy buying equipment, all you need to cook well is a good set of pots and pans (Im partial to my own!), a couple of good knives, including an 8-inch chopper, a heavy mortar and pestle, a set of tongs and a speed peeler," says Oliver.

5. So Whats for Dinner?

"This is the fun part -- planning what goes into the pan. Think seasonally and try to shop for organic products if you can when youre at the market," Oliver urges. "Be intuitive; pan-frying is a fast cooking method, so you want things that are thinly sliced and cook quickly (unless you are finishing in the oven.) You can also score thicker cuts of meat and fish to speed up the cooking time and add more surface area to the food. But what gets me going? Chicken marinated in some fresh herbs and garlic that youve pounded in a mortar and pestle. Steaks that have been liberally seasoned with salt and freshly cracked pepper. Or this fantastic salmon dish that I am including a recipe for below. "Go ahead guys. Get stuck in!"

Fusion food sounds like a science fiction term, but it happens to be one of my favorite types of cuisines. It's a more modern culinary advent, and there's no shortage of reasons to give it a shot, but I'll start at ground zero in case you are new to fusion altogether. What exactly is fusion? You might be able to guess from the name that it involves bringing together different elements to 'fuse' them into something new. Currently, Latin fusion food - or, food that is comprised of elements from Latin American and Hispanic culinary traditions - is making a name for itself as a popular genre of eating all across The United States of America. That's right - from Appleton, Wisconsin to the big cities like New York, New York and Los Angeles, California, we are seeing Latin fusion absolutely blow up the blogs, restaurant review columns, and more.

As in other states, Michigan schools are seeing more and more parents of disabled children pulling them out of public schools, providing alternative private education, and then suing the Michigan Schools to foot the bill. It has become a problem and growing expense for public schools across the nation, ever since the passing of the federal Individuals with Disabilities Education Act, which states that public schools are required to provide special education students with a free, appropriate public education. Disputes arise when parents and school administrators are in conflict over what is appropriate.

The Michigan Schools recently had its Birmingham school district sued by parents of a 17-year-old son with bipolar, obsessive compulsive and Aspergers disorders, as well as other impairments. Andrews condition has become more serious in recent years, though Andrews daily regimen of pills control his otherwise violent and uncontrollable episodes.

His parents believed he would be better educated at home with one-on-one instruction, where there would be few distractions. Andrew had attended Groves High School in Franklin; however, his parents took it upon themselves to pull him out and provide his education at home through private teachers.

Michigan schools officials in the Birmingham district believe that Andrew would do better being educated at the high school with other students, where he could improve his social skills. The dispute between parents and Michigan schools administrators became a legal battle, with the parents seeking compensation of $113,000 to pay for the at-home private teachers and therapists for the past three years, as well as to cover these same expenses for one additional year.

The Michigan schools district in Birmingham charged that they had provided the Lipsitt boy with appropriate educational opportunities by shortening his school week and providing classes with opportunities for him to learn to socialize (some in regular classroom settings). They made numerous attempts to create a special educational program for Andrew, all of which were rejected by his parents, who wanted him home schooled.

This is not the first such case for the Michigan schools that currently have 242,000 students, who receive special educational services, and the number is growing each year. In the 2005-2006 school year, the Michigan schools saw 110 formal complaints over special educational services. There were only 77 such complaints just nine years ago. Though most cases are resolved before ever going to a hearing, the Michigan schools are seeing more and more parents pulling their special needs children out of the public schools first, providing alternative education, and then suing the Michigan schools districts for compensation.

Some cases do not even involve services that the Michigan schools are obligated to provide. One family with an autistic 12-year-old, for instance, was told by their doctor that their son needed several hours each week of speech therapy. They wanted the Michigan schools to provide this, but they offered 40 minutes each week, though they were not obligated by law to provide any such services. The parents then went to their insurance company, which paid for some of the therapy, as well.

Most do not know the important role New Mexico has played in culinary history. Researchers and archeologists agree that New Mexico was one of the earliest settlements of the Mongolians and Tibetans when they came over the Bering strait to settle the Americas. The area has attracted visitors from before recorded history, who in turn created the pure, often spicy flavors known in New Mexico's foods.

Primarily chiles are both king and queen. Chiles themselves have been more developed in New Mexico than anywhereespecially since World War II, when Dr. Jim Nakiyami, a Professor at New Mexico State University gave his leadership to developing many, many new varieties of chiles.

And, most do not know that the first American wines were made in New Mexico. The priests, Jesuits and Monks brought the first cuttings of grapes here in the 1620's from Spain, thus predating the California wine industry by 140 years.

With Prohibition in the 1920's the wine making died out, not to get started again until 50 years later in the late 1970's. Now there are over 50 wine makers throughout the state making world class, award winning wines. The wines go very well with the chile laden traditional dishes as well as any kind of food or enjoyed alone. New Mexico is often credited with being the fountainhead of the Mexican taste. For it is there that the earliest settlers from Asia; who were the root population of the Western areas of the Americas, first settled and lent their primitive cooking methods and simple, straight forward ingredients to create a simple, frontier cuisine that continues to win the hearts and souls of all who try it.

From New Mexico, the earliest settlers went south to populate Central and South America, taking their culinary customs with them. So there are similarities in the native cuisines of all the Americas.

No matter whether the chiles are the unripe green ones or the ripe red ones, they both provide the great benefits of capsaicin which is so amazing as an antioxidant.often cited as the world's greatest anti-oxidant. And anti-oxidants basically are good for us as an inhibitor of cancer cell development among other claims.

Some popular traditional New Mexican dishes are Carne Adovado, which was developed originally by the Spanish as a way to preserve pork after butchering. I love to cook. I was a professional chef and I still enjoy creating wonderful meals for my family and friends. At the same time I worry about the health effects of all that rich eating. And to be honest, I've packed on some extra pounds that I'm not too happy about.

You might think that my knowledge of food and cooking techniques would make it easy to create healthy alternatives. That isn't the case. Over the years I've tried to cook leaner and lighter, but I could never get used to sacrificing taste for health. Most of the low-calorie recipes left me unsatisfied and seemed to put my cravings into overdrive. I'll admit, I gave up on dieting because I just couldn't stand the thought of eating bland tasteless food the rest of my life. As for my family, when I tried to sneak a low-fat meal into my rotation, they complained bitterly. I can't blame them. They were used to fine dining and I was serving them cooked cardboard.

I was at the point of giving up when I happened to chat with my neighbor. She had recently lost a lot of weight and didn't seem like she was suffering at all. She told me she was using a system called metabolic cooking. That threw me. I thought it was a new cooking technique. And I wondered, how can cooking be metabolic? Is it related to metabolism?
